SUMMER SQUASH CAKE 
3 c. flour
3 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. cloves
1 c. softened butter
1 3/4 packed c. dark brown sugar
2 tsp. grated orange rind
4 eggs
1/3 c. orange juice
1 1/2 c. grated squash

Sift the dry ingredients.

Cream the butter, sugar and orange rind. Beat in the eggs. Slowly beat in the dry ingredients alternately with the orange juice. Stir in the squash.

Pour into a greased and floured 10" tube pan and bake in a preheated 350 degree oven until cake tests done when a toothpick inserted comes out clean, 50 to 60 minutes.

Frost with cream cheese frosting or sprinkle with powdered sugar and serve slices with whipped cream.

Cream Cheese Frosting: Combine 8 ounces softened cream cheese with 3 tablespoons butter and beat until smooth. Add 1 teaspoon vanilla, 1 tablespoon orange juice and 4 cups powdered sugar.
