DOUBLE BAKED POTATOES 
2 lbs. potatoes (peeled and quartered)
1 sm. onion (cut up)
1 stick butter
1/2 lb. white American cheese
Milk

Boil potatoes and onion as for mashed (about 20-25 minutes). Drain and put in large bowl. Cut up 1/2 stick of butter and put in with potatoes and onion. Mash well. Add milk as needed. As you are mashing break up cheese and mash with potatoes. Place in baking dish. This can be refrigerated up to 2 days. Bake refrigerated dish 350 degrees for 45-55 minutes or golden brown. It may overflow so protect your oven.
