This is a famous recipe from Leamington Hotel, Minneapolis, Minnesota. 1/2 cup (1 stick) butter, melted 1 cup all-purpose flour 4 cups chicken broth (may use 5 to 6) 1 1/2 cups cream 1 (16 oz.) jar Cheez Whiz 1/2 (12 oz.) bottle beer 1 tbsp. Worcestershire sauce (Lea & Perrin's) dash of yellow food coloring 1/2 cup chopped chives In a heavy pan melt butter and mix with flour until completely blended. Heat over low flame for five minutes mixing constantly. Gradually add chicken broth and cream, mix until smooth and thick. Add cheese and mix until all cheese is melted and soup is smooth. Add beer and Worcestershire sauce. Mix in color and chives. Simmer 15 minutes, stirring constantly. Serve piping hot with popcorn. Serves 8. |
