CARAMEL APPLE CAKE 
1 3/4 c. flour
1 1/2 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. butter, softened
1 c. chopped pecans or other nuts
1/2 c. raisins (optional)
1 1/2 c. firmly packed brown sugar
3 eggs
1/2 tsp. baking soda
1 tsp. vanilla
1 1/2 c. (2 med.) peeled, chopped apples

In large mixer bowl, combine flour, sugar, cinnamon, salt, baking powder, soda, vanilla, butter and eggs. Beat 3 minutes at medium speed. Stir in apples, nuts and raisins. Pour into greased 13x9 inch pan. Bake (350 degrees) for 30 to 40 minutes or until cake tester or toothpick inserted in center comes out clean. Cool and frost with:

1/4 c. butter, melted
1 1/2 c. powdered sugar
3 or 4 tsp. milk
1/4 tsp. cinnamon
1/2 tsp. vanilla

Blend all ingredients and spread on cooled cake.
