My secret for perfectly cooked French toast is to cook it in a small frying pan, just the right size for one slice of bread. Temp shouldn't be too high, maybe just under medium depending on your oven. Each piece should take around 5 minutes or so to cook. The other half of the secret is to cook your toast with a LID. You want the lid on the whole time unless you're checking it or flipping it. It's okay to check it by lifting a corner with your spatula. Frying with a lid gives your pan an oven effect while frying so your toast cooks in the center as well. I get perfect French toast every time this way. Then while cooking the rest I keep them warm in my oven in a large casserole dish or ceramic plate. My oven has a "warm" setting. If yours doesn't the temp is between 150 and 200°F. Just check to make sure they aren't drying out before serving. That's why I use a large casserole dish if I'm making a lot so I can cover the toast so it doesn't dry out. I do this for pancakes as well and a plate for waffles. Good luck!
