RICE JUMBLE - BRIGHT 
1 med. white onions
1 yellow bell pepper
1 (16 oz.) pkg. frozen baby peas
1 (16 oz.) can julienne carrots
3 1/2 c. uncooked white rice

Cook rice in just enough water to fluff and absorb all the liquid. Chop onion and bell pepper and steam them until limp. Drain the carrots. Mix frozen peas and hot cooked rice in the serving dish. Stir in onion and bell pepper; finally stir in the drained carrots with as few strokes as possible. Heat through in microwave oven for about 5 minutes on half power. Yield 8 servings.

At a party stand a "palm tree", made from a carrot and a green bell pepper, in the serving bowl. To make the palm tree, trim the bottom of a green bell pepper to look like 5 or 6 "palm leaves" (but keep it all in one piece, giving the appearance of the leaves joining at the center), and pin it to the thin end of an upside down carrot (peeled). The rice mixture will keep the tree standing until serving time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
