8 oz. pkg. cream cheese 3/4 c. sugar 1/4 tsp. vanilla 3 eggs 1 1/4 c. canned or cooked pumpkin 1 tsp. cinnamon 1/4 tsp. ginger 1/4 tsp. nutmeg Dash of salt 1 c. evaporated milk 9 inch pastry shell Combine the softened cream cheese, 1/4 cup sugar and 1/4 teaspoon vanilla. Add 1 egg, mix well. Spread on bottom of deep 9 inch uncooked pastry shell. Combine 1 1/4 cups pumpkin, 1/2 cup sugar and cinnamon, ginger, nutmeg and salt. Mix well. Blend in 2 slightly beaten eggs and 1 cup evaporated milk. Carefully pour over cheese mixture. Bake at 350 degrees for 65 to 70 minutes or until done. Cool. |
