SUMMER LUNCHEON SALAD DELUXE 
3 c. cooked rice
1/4 c. chopped chives
1 c. grated carrots
1 1/2 c. cooked green peas, drained
1/4 c. diced pimentos
1 c. diced Cheddar cheese
1 (6 oz.) pkg. sliced boiled ham, cut in thin strips
1/2 (.7 oz.) pkg. dry Italian dressing mix
3/4 c. mayonnaise
Salad greens
Tomato wedges

Combine rice, chives, carrots, peas, pimentos, cheese and half the ham. Blend Italian dressing mix into mayonnaise. Add to rice and toss lightly. Cool. Arrange on salad greens with remaining ham on top. Garnish with tomato wedges. Makes 8 servings.

NOTE: Other cooked meat or poultry may be substituted for the ham.
