FRIED EGGPLANT 
Eggplant
1/2 box cracker meal
1/2 c. Parmesan cheese
1 tbsp. basil
1/2 tsp. garlic powder
Black pepper

Cut eggplant in 1/8 inch slices, put salt on them and put in bowl. Cover with plate. Let stand 2 hours, drain off water.

Make batter of 1 egg, 2 cups of milk. Mix cracker meal, Parmesan cheese, basil, garlic powder, pepper. Soak eggplant in butter 10 minutes. Put in mixture and fry.
