FRENCH FRIED EGGPLANT 
1 lg. eggplant
1/2 c. mayonnaise
1/2 c. milk
1 c. bread crumbs, or cornmeal
Oil

Preheat 1 1/2 inch of oil in skillet for deep frying at 370 degrees. Peel eggplant and remove stem ends. Slice into French fry strips. Mix mayonnaise and milk. Dip eggplant into mixture and roll in bread crumbs or corn meal. Fry in oil until golden brown. Salt to taste and serve plain or with French dressing. Serves 4.
