SPINACH BALLS | |
6 eggs 2 (10 oz.) pkg. frozen, chopped spinach thawed, drained and squeezed dry 2 c. herb stuffing mix 1 lg. onion 1 c. freshly grated Parmesan cheese 1/2 c. (1 stick) butter, room temperature Salt and pepper 1 tsp. poultry seasoning, optional Preheat oven to 350 degrees. Beat eggs lightly in large bowl. Add remaining ingredients and blend well. Roll mixture into walnut size balls and place on baking sheet. Bake until golden, about 20 minutes. Serve hot or cold. (These may be frozen and microwaved later.) 6 dozen. (Cooper) |
