SEATTLE SAD CAKE 
1 lb. light brown sugar
4 eggs, well beaten
1/2 c. vegetable oil
2 c. biscuit mix
1 tsp. vanilla
1 c. chopped pecans
1 (7 oz.) pkg. flaked coconut

Mix sugar with eggs. Stir in oil, then biscuit mix a little at a time, until all ingredients are well mixed. Add vanilla, pecans and coconut. Bake in an ungreased 9 x 13 inch pan at 325 degrees for 45 minutes. Very rich!

Do not be alarmed if cake looks strange. It is called "sad cake" because it rises fairly high, then caves in the middle. It is delicious! Can be served warm with whipped cream or ice cream. Serves 15-20.
