FRESH PEACH PIE 
Basic pastry dough for 9 inch pie (2 crust)
1 c. sugar
4 tbsp. flour
4 c. peeled & sliced fresh peaches
1 tbsp. lemon juice

If you submerge peaches in boiling water for a minute or 2 then plunge into cold water, their skins are easier to peel. Preheat oven to 425 degrees. Line 9 inch pie pan with half pastry dough. Mix sugar and flour. Add peaches and lemon juice and toss well. Pile fruit into pie pan. Roll out top crust. Flute the edges and cut vents in top. Bake for 10 minutes, lower heat to 350 degrees for 30 to 40 minutes until top is browned.
