PINEAPPLE STRAWBERRY SALAD 
1 package lime Jello
3 teaspoons freshly squeezed lemon juice
1/2 cup whipped cream made from heavy cream
2 cups cottage cheese
1/2 cup pineapple chunks
1 cup halved strawberries

In a saucepan, bring 1 cup water to a boil. Gradually sprinkle in Jello, stirring until dissolved. Add lemon juice.

Refrigerate until set, then beat until light and fluffy using an electric beater or wire whisk. With clean beaters, beat the chilled heavy or whipping cream. Fold into Jello mixture. Stir in pineapple and strawberries.

Pour into a mold or covered dish and chill until firm before serving.

A light and refreshing dessert!
