OLYMPIC COOKIES 
1 c. butter
1/2 c. packed brown sugar
1 egg
1 1/4 tsp. vanilla
2 1/2 c. quick oats
1 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. plain M&Ms
1/2 c. raisins
3/4 c. chopped nuts
1/4 c. coconut

Beat together butter and sugar until light and fluffy; blend in egg and vanilla. Add combined oats, flour, soda and salt; mix well. Stir in remaining ingredients. Drop dough by rounded teaspoons about 3 inches apart. Bake at 350 degrees for about 10 minutes. Makes 4 dozen 2 1/2 inch cookies. 97 calories each.
