CARDIOLOGY CORNBREAD SURPRISE 
2 boxes Jiffy cornbread mix
1 lb. sausage, hot or med.
12-16 oz. cheese (Colby, Jack mix) shredded
2 med. zucchini squash, shredded
1 med. onion, chopped
Salt & pepper to taste

Try it with fresh mushrooms! Can be spread with soft egg on top.

Mix up cornbread according to package instructions. When cooked, drain grease. Add zucchini and toss. Let cook about 3 to 5 minutes, add to cornbread mix along with cheese. Mix. Pour into 9"x13" baking dish (greased lightly) and bake according to cornbread directions, approximately 20 to 25 minutes. Serve warm for breakfast, lunch or dinner.

P.S. For health conscious people, sprint to your local store for ingredients.

For those who really don't care, try it with pancake syrup poured over it.
