CASHEW CHICKEN SALAD 
3 c. cubed, cooked chicken
1 c. diced celery
1/2 c. diced onions
1/2 c. diced green pepper
1/2 c. diced red (sweet) pepper
2 c. cooked brown rice

2:
1 c. mayonnaise
1 tbsp. lemon juice
1 tsp. powdered mustard

Add all ingredients in (No. 1) large bowl. Combine (No. 2) and fold gently into (No. 1). Then chill. Just before serving add the cashews by gently folding. Serve over crisp greens
