BLACK WALNUT POUND CAKE | |
1/2 lb. butter 1/2 c. shortening 3 c. sugar, sifted 5 eggs 1 tsp. rum flavoring 1 tsp. vanilla 3 c. flour, sifted 1 tsp. baking powder 1 c. half and half or 1 c. milk 1 c. black walnuts, chopped Cream butter and shortening. Add sugar and beat until very light. Add whole eggs, one at a time, beating well after each. Add flavorings and beat again. Add flour mixed with baking powder, alternating with half and half, starting and ending with flour. Fold in walnuts. Pour into tube pan that has been greased and floured. Use 1 very large pan (4 3/4 x 9 1/2 inches) for 80 minutes or use 2 regular pans (3 1/2 x 9 inches) for 70 minutes. Bake at 325 degrees and do not open oven during first hour. |
