CRANBERRY CAKE WITH HOT CARAMEL
SAUCE
 
2 c. all-purpose flour
2 c. sugar
2 tsp. baking powder
3 tbsp. unsalted butter
1 c. milk
3 c. cranberries, halved
1/2 c. packed dark brown sugar
1/2 c. heavy cream

Sift flour, 1 1/2 cup sugar, and baking powder. Add 4 teaspoons of butter. Cut into bits and combine the mixture until it resembles meal. Stir in the milk and cranberries. Line the bottom of a 10-inch round baking pan, buttered, with wax paper, then butter and flour the paper. Pour the batter into the pan and bake in 350 degree oven for 40-45 minutes.

Let the cake cool on rack for 10 minutes, then turn onto the rack and remove wax paper. Cool completely.

In a saucepan, combine brown sugar, remaining 1/2 cup white sugar, 5 teaspoons butter and the cream. Stir constantly and bring to a boil. Stir until sugars are dissolved. Serve the sauce over the cake. WONDERFUL HOLIDAY DESSERT!
