MRS. HARRY THORNE'S CHILI SAUCE 
9 lbs. tomatoes, peeled
3 big onions
2-3 hot chilies (not jalapeno)
6 bell peppers
3 c. sugar
1 1/2 tbsp. mixed pickling spice
2 tbsp. salt
1 c. vinegar (may mix with some water)

Chop onions and peppers (use food processor if desired). Place tomatoes, sugar, vinegar, salt, onions and peppers in large kettle. Put spices in cheesecloth bag and tie. Add to mixture.

Cook about 2 hours, stirring occasionally to keep from sticking. Mixture should boil down by at least 1/3. Put into hot sterilized jars and seal. Excellent with pinto beans and meats.
