CHICKEN A LA KING 
1/3 c. butter
1/2 c. unsifted all purpose flour
2 c. half and half (skim milk can be substituted)
1 c. chicken broth
2 c. cooked chicken, cubed
4 oz. sliced pimento
4 oz. sliced mushrooms, undrained
1/2 c. green pepper, diced
1 tsp. salt
1/4 tsp. pepper

In 2 quart casserole place butter. Melt butter. Blend in flour. Gradually stir in half and half and broth. Mix well. Microwave at high 8 to 10 minutes, stirring with whisk after 4 minutes, until thickened and smooth. Stir well again.

Mix in remaining ingredients. Cover and microwave at medium high until hot. Let stand 5 to 10 minutes before serving to blend flavors. Serve over rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
