VIDALIA ONION CUSTARD 
Georgia's Vidalia onions are becoming more famous each year, competing with those from Maui and the Northwest. This is a delicious way to prepare Vidalias. It is excellent with steaks or roast beef.

2 lbs. Vidalia onions, sliced thin
3 tbsp. butter
1 c. milk
2 eggs
1 egg yolk
1 tsp. salt
1/4 tsp. ground nutmeg
Pepper, to taste

Cook onions in butter in a large skillet over moderate heat, stirring occasionally, for 30 to 40 minutes, or until golden and soft. Let onions cool.

Whisk together milk, eggs, egg yolk, salt, nutmeg and pepper in a large bowl. Beat mixture until well combined. Stir in onions. Transfer to a well-buttered baking dish.

Bake in a 325 degree oven 40 to 50 minutes, or until lightly golden and a skewer inserted in the center comes out clean. Serve hot or at room temperature. 4 servings.
