GREEN BEANS AND MUSHROOMS 
2 lbs. fresh green beans
3 shallots, finely chopped
2 tsp. lemon juice
1 tsp. flour
Dash of hot pepper sauce
1/4 c. butter
1 lb. fresh mushrooms, cleaned and sliced
1 tsp. salt
1/2 c. heavy cream

Cook green beans. Melt butter in large skillet. Add shallots and saute until tender. Add mushrooms and lemon juice and cook, stirring constantly, until mushrooms are tender. Combine flour and salt. Sprinkle over mushrooms. Cook for 1 minute, stirring constantly. Add pepper sauce and cream. Bring to boil and cook 1 minute. Pour over beans. Toss just before serving. Serves 4.
