TIROPETES - CHEESE TRIANGLES
(GREECE)
 
1 lb. feta cheese
1 lb. small curd cottage cheese
4 eggs
1 lb. Phyllo
1/2 lb. sweet butter, melted

FILLING:

Crumble the feta cheese; then mix with the cottage cheese and eggs.

PHYLLO:

Cover dough with wax paper and a damp towel until ready to use. Cut the phyllo into 3 inch strips. Brush with the melted butter. Place 1 teaspoon of the filling in the lower left corner of a strip, fold over the corner to make a triangle along the strip. Continue until the entire strip is folded. Place the triangles on a greased cookie sheet and brush with melted butter. Bake at 350 degrees for 15 to 20 minutes or until golden brown. Or bake at 450 degrees for shorter cooking time. Yields: 100 triangles.
