LOW FAT, NO CHOLESTEROL PUMPKIN
PIE
 
3 egg whites, beaten
1 (16 oz.) can pumpkin (not pumpkin pie mix)
1 1/2 c. sugar (or 3/4 c. brown & 3/4 c. granulated sugar)
1/4 c. butter
3/4 tsp. ginger
3/4 tsp. cinnamon
3/4 tsp. nutmeg
Dash salt
1/8 c. skim evaporated milk

Beat egg whites slightly. Melt butter. Mix ingredients adding milk and butter last. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake 45 minutes more.
