LOW FAT NO CHOLESTEROL YOGURT
CAKE
 
3 tbsp. vegetable oil
1/2 c. sugar
1 - 1 1/2 tsp. lemon extract
1/4 c. skim milk
1/4 c. unflavored low fat yogurt
1 c. flour
1/2 tsp. baking soda
2 egg whites

Brush 8" layer cake pan with 1/2 to 3/4 teaspoon oil. Mix remaining oil, sugar and lemon extract. Mix until blended. Add milk and yogurt. Then flour and baking soda.

In another bowl beat egg whites until stiff. Fold into batter and transfer to prepared pan. Bake at 350 degrees for 20 to 25 minutes or until firm to touch. Cool until lukewarm. Turn onto rack. Serve with fruit or just out of hand.
