SEAFOOD RICE SALAD 
1 c. shrimp
1 (6 1/2 oz.) can water packed tuna, drained
3 c. cooked rice, cooled
1/2 c. chopped green onion
1/4 c. chopped sweet pickles or relish
1 1/2 c. sliced celery
3 hard-cooked eggs, chopped
1 c. mayonnaise
1 tbsp. lemon juice
Salt and pepper

Combine all ingredients for salad. Toss gently. Chill. Serve on a bed of lettuce and garnish with tomato wedges.
