RICE SALAD 
3 c. cooked rice
1 c. thin ham strips
1 c. baby frozen peas, thawed
4 oz. pimentos, drained and chopped
2 tbsp. chopped chives or scallions
1 tbsp. minced parsley

DRESSING:

2 tbsp. vinegar
1/2 c. salad or olive oil
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 tsp. Dijon mustard

Combine rice, ham, peas, pimentos, scallions and parsley in a large owl.

Blend dressing ingredients and add to rice mixture.

The following may be added for variation:

1 c. diced vegetables such as tomatoes, green or red pepper, raw zucchini, cucumber
1/2 c. black olives, sliced
1 c. shrimp or other seafood
