PUMPKIN BREAD 
1 c. pumpkin
3 c. sugar
4 eggs
3 1/4 c. flour
2/3 c. water
1 c. Wesson oil
1 1/2 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda
1 tsp. salt
1 c. nuts
3/4 c. raisins or other fruit such as cherries

Preheat oven to 350 degrees. Mix flour, cinnamon, nutmeg, salt and soda together. Set aside.

Cream sugar, eggs, Wesson oil, and pumpkin together. Add creamed mixture to dry ingredients. Mix together well. Add fruit and nuts last and blend in with mix. Put batter into 4 one pound coffee cans. Fill cans 1/2 full as the batter doubles in size. Bake 1 hour.
