ITALIAN STYLE CHOWDER | |
1/2 lb. zucchini, sliced 2 onions, sliced 1 (15 oz.) can garbanzo beans 1 (1 lb.) can tomatoes, chopped 1/2 c. butter 1 1/2 c. dry white wine (optional) 2 tsp. minced garlic 1 tsp. minced basil 1 bay leaf Salt and pepper 1 c. shredded Jack cheese 1 c. grated Romano cheese 1 c. whipping cream Combine zucchini, onions, beans, tomatoes, and their liquid, butter, wine, garlic, basil, and bay leaf in 3 quart baking dish. Cover and bake at 400 degrees for 1 hour, stirring once halfway through. Season to taste with the salt and pepper. Stir in cheese and cream. Bake 10 minutes longer. Makes 3 quarts. |
