JAMBALAYA 
1 lb. hot smoked sausage
1 c. chopped onion
3/4 c. chopped green pepper
1 clove garlic
1/2 c. white wine
1 (16 oz.) can tomatoes
1 tbsp. olive oil
1/2 tsp. salt
1/2 tsp. thyme
1/4 tsp. basil
1/4 tsp. marjoram
1/4 tsp. paprika
2 tbsp. parsley
1 c. rice, uncooked
Tabasco to taste

Cut sausage into round slices, saute until brown. Remove from pan, drain grease. Add olive oil, saute onion, garlic and pepper until onion is clear (5 minutes). Stir in sausage, tomatoes with their liquid, wine and all spices. bring to boil. Reduce heat, add rice, mix well. Cover and simmer for around 25 minutes or until rice is tender.
