SUCCATASH 
2 lg. cans whole kernel corn
2 lg. cans baby lima beans
1 lb. luncheon meat cut into 1" pieces
1 sm. tomato sauce
1 med. onion
3 cloves garlic
2 tbsp. parsley flakes
1/2 bell pepper, chopped
1/4 c. cooking oil
1 (16 oz.) stewed tomatoes

Dice luncheon meat into small pieces. Saute onions, parsley and garlic until tender. Add meat and saute 5 minutes more. Add tomatoes and tomato sauce. Cook 30 minutes. Add corn, beans, salt and pepper. Simmer for 20 minutes. Serve over rice. Serves 8.
