TURKEY SLICES WITH CURRIED CREAM
SAUCE
 
1 1/2 lbs. turkey tenderloins
2 tbsp. butter
3 tbsp. all-purpose flour
1 c. chicken broth
1/4 c. milk
1/2 tsp. curry powder
1/2 tsp. grated lemon rind
Hot cooked rice
1/4 c. chopped pitted dates
1/4 c. chopped cashews
1/4 c. chopped green onions

Place tenderloins in 13 x 9 inch pan. Bake at 400 degrees for 25 to 30 minutes. Cut tenderloins into 1/2 inch slices; keep warm. Melt butter in heavy saucepan, add flour, stirring until smooth. Cook 1 minute. Gradually add broth and milk; cook over medium heat, stirring constantly, until mixture is thick and bubbly. Stir in curry powder and lemon rind. Place turkey slices on top of rice; pour sauce over turkey and sprinkle with dates, cashews, and onions. Yields: 6 servings.
