COCONUT APPLE DELIGHTS | |
1/2 c. butter, softened 1 1/4 c. flour 1 tsp. grated lemon peel 1 tbsp. melted butter 3/4 c. sugar 1 tbsp. cornstarch 1 tbsp. water 2 tbsp. lemon juice 1 egg, beaten 1 1/2 c. coconut Combine butter, 1/4 cup sugar and flour; mix until crumbly. Press evenly into bottom of 9 x 9 inch or comparable pan with 1/2 inch extending up sides. Prick bottom with fork. Bake at 350 degrees for 20 minutes. Add cornstarch to water; stir. Add applesauce with lemon juice and rind. Cook until thickened, cool. Combine egg, remaining sugar and melted butter and coconut. Mix well. Remove pastry from oven. Spread with applesauce mixture. Spread coconut mixture evenly over applesauce. Bake at 350 degrees for 20 minutes. Cool. Cut as desired. Approximately 20 pieces. |
