ORANGE CHICKEN AND SAUCE 
3 tbsp. butter
4 skinless, boneless chicken breast halves
Salt and pepper to taste
2 tbsp. flour
1 c. frozen orange juice concentrate
1/2 c. water
1/4 tsp. cinnamon
1 tbsp. grated orange peel

In a large skillet, melt butter. Add chicken, salt and pepper. Brown chicken on both sides until chicken is thoroughly cooked. Remove chicken and set aside. Add flour to skillet. Cook over low heat about 1 to 2 minutes. Add orange juice concentrate, water and cinnamon. Simmer, stirring until sauce is thickened. Return chicken to skillet, spooning sauce over chicken. Cover and simmer 5 minutes or until heated through. Add grated orange peel. Stir and serve. Serves 4.
