BEST MEAT LOAF 
1 egg, beaten
3/4 c. milk
1 tsp. poultry seasoning
1 1/2 tsp. salt
Dash pepper
2 c. soft bread crumbs
1 onion, minced
1 lb. pork shoulder, ground
1 lb. veal shoulder, ground
5 to 6 strips bacon

Set oven for moderate, 350 degrees. Combine first 6 ingredients. Let stand 5 minutes. Add onion and meat; mix well. Line a loaf pan, 8 x 5 x 3 inches, with bacon across the width of pan. Pack meat mixture into pan. Bake 1 1/2 hours. Remove from oven. Invert meat loaf on baking sheet; lift off pan; raise oven temperature to very hot, 450 degrees. Return meat loaf to oven for about 10 minutes to crisp bacon. Makes 6 to 8 servings.
