PUMPKIN MUFFIN 
1 c. cooked, mashed pumpkin
1 c. white seedless raisins
1/2 c. water
2 eggs
1 1/4 c. sugar
3/4 tsp. cinnamon
3/4 tsp. ground cloves
1/2 tsp. salt
1/3 c. oil
1 3/4 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda

Soak raisins in 1/2 cup water. Set aside. Do not drain. Combine eggs, sugar, pumpkin, spices, salt and oil. Beat well. Stir in raisins and water. Set aside. Combine rest of ingredients in large bowl. Make a well in the center. Pour in the pumpkin mixture and stir until moistened but slightly lumpy. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 400 degrees for 25 minutes. 24 muffins.
