PUMPKIN BREAD 
3 1/3 c. sifted flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
3 c. sugar
1 1/2 tsp. salt
1 c. salad oil
4 eggs
2/3 c. water
1 (sm.) can pumpkin

Sift dry ingredients and add oil, eggs, water and pumpkin. Bake at 350 degrees for 60-70 minutes. Yield: 6 mini loaves or 3 large ones.

This bread can be topped with cream cheese frosting although it's great without it.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box powdered sugar

Mix together; add nuts if desired.
