1 c. carrots, grated 2 c. cabbage, shredded 1/2 c. peanuts, roasted or raw 2/3 c. sunflower seeds, roasted or raw 1/2 c. raisins 1/2 c. apples, diced DRESSING: 1/2 of 1 banana 1/3 c. buttermilk 1/2 c. ricotta cheese 1/4 c. apple juice Toss together carrots, cabbage, peanuts, sunflower seeds, raisins and apple. Blend banana, buttermilk, cheese and apple juice in a blender. Toss dressing with salad. Serves 6 to 8. |
