DUTCH BABIES 
2-3 qt. fry pan (preferably with slanted sides)
1/4 c. butter
3 eggs
3/4 c. milk
3/4 c. flour
Fresh fruit, whip cream or maple syrup, nutmeg, cinnamon, powdered sugar

Place butter in pan in oven heated to 425 degrees. Blend eggs in blender on high for 1 minute. Gradually add milk, then flour. Blend 30 seconds.

Remove from oven and pour batter into hot pan. Return to oven and bake 15-20 minutes until puffy and well browned. Spoon on fresh fruit, whip cream or maple syrup, nutmeg or cinnamon, powdered sugar.

Quarter and serve with big dollop of whipped cream. When no fresh fruit is available, saute 2 apples peeled, sliced until tender. Sprinkle with cinnamon. Pour this into baby and top with whipped cream.
