TURKEY CREPES 
2 eggs
2/3 c. milk
1 tbsp. melted butter
1/2 c. flour, sifted
Dash of onion powder
Pepper
Parmesan cheese

Beat eggs well. Slowly add milk, butter, flour and onion powder. Mix until batter is creamy. Heat oil on griddle. When oil is very hot, drop crepe batter into rounds on griddle. Cook, turning once, until light brown on both sides.

After crepes are cooked: Spread mayonnaise on crepe; sprinkle on pepper and Parmesan cheese. Add thinly sliced turkey and roll up. Heat in microwave and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
