HAWAIIAN FILLED COOKIE 
2/3 c. shortening
2/3 c. sugar
2 eggs
1 tsp. vanilla
1 c. pineapple filling
1 tsp. grated lemon peel
2 c. sifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt

Cream shortening, sugar and eggs. Beat well. Stir in vanilla, lemon peel. Sift flour, baking powder, salt together. Stir into cream mixture. Chill. Roll out on lightly floured board 1/8 inch thick. Cut dough with 2 1/2 inch cutter. Place half the circle in an ungreased baking sheet. Spread teaspoon of filling almost to edges. Cut slit in remaining circle, place over filling, seal with a fork. Bake at 400 degrees for 8 to 10 minutes.

Filling: Cook 1/2 cup sugar, 1 tsp. cornstarch, 1 can crushed pineapple, cook until thick and cool.
