PUMPKIN CREAM CHEESE ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1/4 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. vanilla
1 c. XXXX sugar
8 oz. cream cheese
1/2 tsp. vanilla
1/2 c. nuts
1/4 c. butter

Beat eggs. Add sugar, pumpkin, and lemon juice; set aside.

Mix flour, soda, cinnamon, ginger, nutmeg, salt and vanilla. Combine with pumpkin mixture. Put in jelly roll pan lined with wax paper. Bake 15 minutes at 375 degrees. Cool 5 minutes. Roll up.

Mix XXXX sugar, cream cheese, vanilla, nuts and butter. Unroll cake. Spread with filling. Reroll. Chill. Slice to serve.
