ANYTIME BREAKFAST BAGEL 
1 c. sm. broccoli flowerets
1/2 c. frozen egg substitute with cheese, thawed
1/4 c. 1% low-fat cottage cheese
1/4 tsp. pepper
Vegetable cooking spray
1/4 c. (1 oz.) shredded 40% less fat cheddar cheese
2 (2 oz.) frozen bagels, thawed, split and toasted

Cook broccoli in boiling water 2-3 minutes or until crisp-tender. Drain; rinse with cold water and drain again. Set aside.

Combine egg substitute, cottage cheese, and pepper in a small bowl; beat well with a wire whisk. Stir in broccoli. Coat a medium non-stick skillet with cooking spray; place over medium-high heat until hot.

Pour egg mixture into skillet; sprinkle with cheese. Cook, stirring gently, until egg mixture is set. Spoon egg mixture evenly over 2 bagel halves. Top with remaining bagel halves. Serve immediately. Yield: 2 servings. (299 calories per serving)
