CHICKEN KABOBS | |
4 chicken breast halves 1/4 c. cider vinegar 1/4 c. soy sauce 2 tbsp. vegetable oil 2 tbsp. honey 2 sm. green onions, minced 10 lg. fresh mushrooms, halved 10 slices bacon, cut in half 8 oz. can pineapple chunks, drained Skin and bone chicken. Cut meat into chunks approximately 1 1/2 inch square. Combine vinegar, oil, honey, soy sauce, and green onions. Add chicken and mushrooms to sauce and marinate in refrigerator 2-12 hours. Place a piece of chicken and mushrooms together and wrap with a piece of bacon. Alternate chicken-mushroom-bacon with pineapple on skewers. Grill until chicken is done. Makes 4 servings. |
