FRENCH ONION PIE 
Pastry for 9 inch single crust pies - deep dish makes 1 pie - reg. makes 2 pies
2 cans (3 oz.) French fried onions
3 eggs
1 1/2 c. milk
1 1/4 tsp. salt
Dash cayenne pepper
1 c. grated sharp Cheddar cheese

Preheat oven to 425 degrees. Spread onions in pie pan or pans. In small bowl beat eggs, beat in milk, salt and pepper. Pour egg-milk mixture over onions. Sprinkle with grated cheese. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake an additional 15 to 20 minutes longer or until custard is set. Cool slightly before cutting to serve. Serves 6.
