PORTUGUESE CHICKEN IN CASSEROLE | |
2 1/4 lb. fryer cut up & skinned 1/2 clove garlic, crushed Salt and pepper to taste Paprika to taste 1 c. orange juice 1/2 c. tomato puree 2 tbsp. soy sauce 2 tsp. prepared mustard 1 med. green pepper, chopped 2 sm. oranges, peeled & sectioned Rub chicken with garlic, sprinkle with salt and pepper. Put in casserole. Mix orange juice, puree, soy sauce, mustard and green pepper. Pour over chicken, cover and bake in 350 degree oven for 50 minutes or until tender, add oranges and bake 5 or 10 minutes longer until oranges are heated through. |
