CUCUMBER PICKLES 
1 pk. cucumbers (medium size)
1 c. salt
2 1/4 qt. vinegar
1/4 c. mixed pickle spices
3 c. sugar

Wash and cut cucumbers, about 1/2 thick slices. Mix slices with salt and let set overnight.

In morning, drain and press out all juice. Rinse in cold water.

Boil vinegar, sugar and spices for 1 minute. Add cucumber and simmer for 5 minutes. Pack cucumbers into clean, hot jars within 1-inch from top. Fill with liquid to top; seal.

Makes about 12 pints.
