COCONUT CLOUD PUDDING 
1 c. crushed saltine crackers
1/2 to 1 c. coconut
2 eggs
1 qt. milk
1 c. sugar
1 tbsp. vanilla
6 egg whites

Mix eggs, sugar, 1/2 cup of the milk. Add crackers to egg mixture. Heat remaining milk and add the egg mixture to this. Add coconut. Cook until thick, then add vanilla. Beat egg whites until thick. Blend or fold this into cracker mixture. Pour into oven proof dish, casserole dish is fine. Sprinkle coconut over top. Serve as is or bake 15 to 20 minutes at 350 degrees.
