SOUR CREAM ENCHILADA PIE | |
1 lb. ground beef 1 (16 oz.) sour cream 1 sm. can green chilies, chopped 1 med. onion, chopped 1 can chicken soup 2 c. longhorn cheese, shredded 1 pkg. corn tortillas (use 6) Cook ground beef, drain and set aside. Combine onion, green chilies, sour cream and chicken soup - bring to a boil. Dip tortillas in hot water until pliable. Using glass pie dish, layer ground beef on bottom, break 3 tortillas in half and layer over beef, then add a layer of sauce. Sprinkle 1/2 of cheese over this, repeat layers using all ingredients. Bake in 350 degree oven for 30 minutes. Garnish with ripe olives, serve with chips and shredded lettuce. Makes one pie. |
